Vegetable Biriyani

To all Biryani lovers....



 Traditional home style Biryani...

To all Biriyani lovers,please take a note...Trust me this fabulous Vegetable Biriyani does not take more than 45 minutes to be made.To make this happen, you really have to be organized.Let me take you through the various steps in the preparation..


Ingridients:                   For 4 servings


For Rice
 1/2 cup Rice 
50gms Butter
2 Cardamom
3 Cloves
2 Cinnamon Stick
1 Bay leaf
3 Mace strands
3 Cups of water
Salt to taste


For Vegetable Curry:


50 gm Butter
2 Cardamom
2 Cloves
1 Cinnamon stick
1 Onion
2 gm Green Chilli
1 tbsp Chopped ginger
2 tbsp Garlic chopped
1 tbsp Turmeric powder
1/2 tbsp Chilli powder.
1/2 tbsp Cumin powder.
1/2 tbsp Coriander powder.
1/2 Cauliflower
2 Carrot
2 Potato(cut into small cubes)
1/2 cup of Long beans


For Garnish:
Coriander leaves chopped -One handfull.
Mint leaves chopped-half a handfull.
Cashew nuts,Almond sliced and Raisins-fried .
Cheyy-crushed.
Method of Preparation:

For Rice
  1. Wash rice in cold running water for 3-4 times and soak it for 30 minutes.
  2. Drain and keep aside.
  3. In a clean cooking utensil,heat butter and add whole spice-cinnamon,cardamom and cloves,cook until you get strong flavour.
  4. Add rice now and stir fry until the rice becomes crisp.
  5. Add water to the rice (water should be boiled and kept by the side) and add salt.
  6. Bring it a boil stirring  the rice continuously (Caution-rice should not break while stirring).Turn the fire to the lower side.
  7. Cover with a lid,cook the rice to 3/4th doneness.Remove from fire and keep aside.
  8. Using a fork or back side of spoon,make the rice flaky before it becomes cold. 


For the Veg.Gravy:

  1. Heat buttr in clean Medium sized utensil,add cinnamon,cardamom and clove,and cook for a minute.
  2. Add onion,cook until it becomes translucent,add ginger,garlic and green chilli to it.Continue to cook until the onion turns slightly golden brown  in color.
  3. Add powdered  masalas now-chilli,turmeric,cumin and coriander.Cook for about 3 minutes.
  4. Now add all the vegetable and cook for about 3 minutes.Add enough water and bring it boil.
  5. Turn the heat to a lower side and continue to cook for about 15 minutes.Check the vegetable for doneness,check the seasoning.Finish it with chopped coriander leaves.

Now you can layer the rice and vegetable curry alternatively .Take a medium sized utensil and start layering the rice and veg.curry alternatives(3-4 layers).Spooning out some extra gravy on top will give you a better taste.


This biryani is  best served  with lemon pickle,raita and fried pappad(pappadam).Garnish(decorate) it with chopped coriander leaves,mint leaves,cashewnuts,almonds,raisins and cherry.


Note:For the Vegetable curry,you can choose vegetables of your choice.
